L'ULIVETO DELLA MIGNOLA
La nostra fattoria è casa per 120 piante secolari di Mignola.
In questi 10 anni ho vissuto insieme a questi alberi ogni giorno, e ho imparato a conoscere ognuno di loro. Più che chiamarli “i miei alberi” preferisco chiamarli “i miei amici” perché sono i miei compagni. Non sono delle macchine che “rendono” olio extra vergine, ma delle creature centenarie con le quali ho il grande privilegio di passare la mia vita. Ci donano ciò che possono quando le condizioni lo permettono.
La Mignola è una rara varietà d’ulivo, autoctona alla zona intorno a Cingoli in provincia di Macerata. Questa varietà, difficile da raccogliere, è rinomata per la particolare caratteristica di presentare profumi di frutti di bosco ed è inoltre molto ricco in polifenoli, responsabili per il suo gusto decisamente amaro.
Scegliamo con attenzione il momento della raccolta e le olive vengono trasportate in frantoio e lavorate immediatamente.
Nel 2012 abbiamo messo a dimora 90 piccoli olivi di Mignola, portando nuova vita al vecchio oliveto.

OLIVE GROVE
Our farm is home to 120 century-old Mignola olive trees.
For the past ten years, I have lived alongside these trees every day and have come to know each one of them. Rather than calling them “my trees,” I prefer to call them “my friends,” because they are my companions. They are not machines that “produce” extra virgin olive oil, but century-old living beings with whom I have the great privilege of sharing my life. They give what they can, when conditions allow.
Mignola is a rare olive variety, native to the area around Cingoli in the province of Macerata. This variety, which is difficult to harvest, is known for its distinctive aromas of wild berries and is also very rich in polyphenols, which give it its characteristically bitter taste.
